1.<\/strong>Mary, my husband recently ordered your vintage<\/a> cupcakes for<\/strong>\u00a0my birthday. I was blown away when he presented them to me.\u00a0<\/strong>What got you started with these special creations?<\/strong><\/p>\n

I was always extremely interested in cooking and baking from an\u00a0early age, but in school art was what really grab my attention.\u00a0I had planned on going to either art Collage or the Shannon\u00a0School of Hotel Management and Catering , but at my parent’s\u00a0request \u2018to first get a broad degree and then follow the others\u2019 I\u00a0attended UCD where I Graduated with Honors from Commerce and\u00a0German.<\/p>\n

I loved my time at UCD but found the courses\u2019 required\u00a0readings hard and specially learning a new language as I am\u00a0dyslexic. I knew that wasn\u2019t the path for me and that I wanted to do\u00a0something with Art and\/or food I just wasn\u2019t sure how yet.\u00a0Upon graduating from UCD I enrolled at the \u2018Ballymaloe Cookery\u00a0school\u2019 in Cork where I studied (intensely) for 3 months. During\u00a0my time there I found my self more and more drawn to anything\u00a0cake or dessert related. <\/p>\n

When I graduated from Ballymaloe I was extremely\u00a0lucky to get an opportunity to work a week in Dublin\u2019s Michelin\u00a0star restaurant: \u2018Chapter One\u2019. I just loved it there. Everybody was\u00a0so lovely and friendly. Soooo… I just kept coming back. I ended up\u00a0working there under the FAS program for almost 7 months. During my\u00a0time there, I explored my passion for pastry and trained under head Pastry Chef Darren Hogarty (Valrhona\u2019s Patisserie\u00a0Champion 2010) alongside owner and Michelin starred Head Chef: Ross Lewis.<\/p>\n

During my time at Chapter One I also competed in TV3\u2019s National\u00a0Cookery Competition, \u2018Head Chef\u2019, where I placed overall 2nd. I was also lucky enough to participate in the preparation of the pastry\u00a0portion of the dinner for the visiting Queen of England.<\/p>\n

I loved my time at Chapter One, but still knew it wasn\u2019t 100% what\u00a0I wanted to do. I went to work At 98fm in Dublin (so I could pay my bills ) while I decided what it was I wanted to do. I decided to open\u00a0my own bespoke cake company \u2018Cake Chick\u2019 while I worked at 98fm and in June this year I decided to take the jump and focus 100% on\u00a0the cakes. I had finally found my mix of art, food and business.<\/p>\n

2. Every cupcake<\/a> is like a work of art. Do you create every topping<\/strong>\u00a0yourself?<\/strong>
\nEvery topping on my cakes are all hand made. It\u2019s great as it\u00a0gives me the freedom to be as creative with them as I like or to\u00a0tailor an order to exactly what the customer wants. However\u00a0the down side is that they take longer, which in turn costs\u00a0more, which can be hard to explain to customers when they are\u00a0comparing prices with larger retailers who can mass produce.<\/p>\n

3. Tell me about your kitchen: what do you love, what do you<\/strong>\u00a0wish was different?<\/strong><\/p>\n

I work from my apartment at the moment that I share with my\u00a0boyfriend. It\u2019s a great kitchen for an apartment, I have two ovens\u00a0and granite work tops which are prefect for the type of work I do .It\u00a0also has a 6 ring gas hob which is an essential in my opinion. I love
\nthe vintage girly feel so my fuchsia pink Kitchen aid, which I aptly\u00a0named \u2018Betty\u2019 takes pride of place.<\/p>\n

What would I change? Well would of course love a bigger kitchen\u00a0with more storage and counter space while my kitchen is fab for an
\napartment , it starts to get very small when I am working all day\u00a0in it. If I\u2019m honest I would rather not work from home. I\u2019m a VERY
\nchatty person and find working alone in my apartment gives me\u00a0cabin fever! I would love to be working in my own bakery with lots of
\npeople coming in and out so I can reach my \u2018words spoken a day\u2019\u00a0quota, Which at the moment my poor boyfriend and my friends are
\nsubjected to in the evenings.<\/p>\n

4. Have you always been a baker?<\/strong><\/p>\n

Nope baking is something that I came to in the past few years.<\/p>\n

5. Butter cream icing is my weakness. What is that one thing you<\/strong>\u00a0simply cannot resist?<\/strong><\/p>\n

Cheese! I\u2019m a savory person, but just REALLY enjoy making\u00a0cakes and cupcakes \u2026. All things pretty.<\/p>\n

6. The beach or mountains?<\/strong><\/p>\n

Give me a beach, cocktails and bikini any day. I\u2019m not the best at the\u00a0auld exercise so I think the mountains would do well as a back drop\u00a0to the beach!<\/p>\n

7. What songs are playing in your house today?<\/strong>
\nNikki Minaj is blasting at the moment in my apartment ( I\u2019m\u00a0sure the neighbors love me) any thing dancy I find is great for\u00a0getting you going in the kitchen but I have quite the eclectic\u00a0play list. It tends to bounce between any thing from the likes of\u00a0Nikki , to Etta James to Phil Collins to classical!<\/p>\n

8. Favourite coffee corner in Dublin?<\/strong>
\nIt has got to be Juniors on Bath Ave\u2026 the best Sandwiches \/salads\u00a0and coffee in town.<\/p>\n

9. Dream lunch with friends. Tell us about it.<\/strong><\/p>\n

Were we not just talking about the beach, cocktails and bikinis?<\/p>\n
