1. We love chocolate around this business. What got you started with this dark swirling beauty we call chocolate?

I decided one year to make my own Christmas presents. I thought food hampers were a good idea and more personal. I put time into the gifts and the truffles were a huge success. Soon I got requests from friends and neighbours, so it started from there. Then I decided to make truffle pops which are wrapped in pretty bags with a ribbon. They make great gifts!

2. Why did you choose Etsy as your primary sales platform?

I learned about Etsy from a friend: it’s a friendly environment and very easy to use. You can choose which areas you want to sell to and there is always help on hand where needed. People can order your product from their home, and I can make truffles fresh to order.

3. Chocolate is a controversial subject because of the ethics in the industry. Your stance?

I try and source as much of my chocolate Fair Trade and Organic. I think it is important to support these initiatives.

4. Tell me more about cocoa, how do I know that my chocolate is of a superior quality?

All the chocolate I use is of a high cocoa content, with the dark chocolate ranging from 70-85% and the milk chocolate from 35%. I also use white couverture chocolate and a mix of milk and dark when I coat other varieties of truffles.

5. Do you work with brides to create favours and gifts for their wedding day?

If a bride should want a specific chocolate, flavour, shape or pattern then I will work as closely as possible with her to decide on something that I can do and that suits her needs. I also offer a choice of bags, boxes, packaging and flavours.

6. What wakes you up in the morning?

The sun, and failing that my alarm clock.

7. Sun bathing or dancing in the rain?

Sun bathing, I would dance in the rain but preferably if it was hot!

8. How do brides know that their gifts will come out looking right if they order from you?

I apply very strict quality control standards to my products, ensuring that they look the way they are advertised and taste the way they are being described. Anything that doesn’t fit the quality criteria is discarded. Customer satisfaction is of the utmost importance to me and I like to keep them updated throughout the process from the order to the delivery.

9. Tell me something that will surprise me today.

I offer personalized packaging and boxes for the wedding favours with the date of the wedding and the couple’s names free of charge.
