Newlywed Recipe Baked French Potatoes

I don’t know about you, but having moved in with my boyfriend for over a year now (yay, we’ve been living together for a year now!), I have a new found respect for the Sunday home cooked meal. Personally, I think when food is made with a little love it can be a really fun pastime to do together on a casual Sunday afternoon.

Not that I do a lot of cooking – I am lucky enough to have found a guy who actually wants to do a lot of cleaning and cooking. But when I am occasionally allowed to get the frying pan and baking tray to myself, I try to make the most of a good meal!

This Sunday, I will be making an attempt (attempt is the operative word here) at Baked French Potatoes a lá Jamie Oliver. The man famous for his 20-minute meals, I am hopeful that this should be a relatively easy task for me!

Newlywed Recipe: Baked French Potatoes (serves 4-6)

Preheat your oven to 200 degrees. While your oven is warming up, peel and finely slice 800g of potatoes. Peel, halve then finely slice 400g of medium onions and 3 cloves of garlic. Pick some leaves from a little handful fresh flat-leaf parsley and finely chop. Pour a little olive oil into a large, hot pan with your onions and parsley. Slowly fry for 10 minutes, until your onions are soft and light golden. Add a little pinch of salt and pepper for crispiness.

Next mix 1 vegetable or chicken stock cube in 850ml of boiling water. In a large baking dish, place a layer of potatoes, a sprinkle of salt and pepper, followed by a layer of onions. Repeat until you’ve used up your ingredients but try to finish with a layer of potatoes. Next, break up 2 knobs of butter and dot over the top. Rub olive oil into your foil and place over your baking dish butter side down.

Place in your now warmed up oven for 45 minutes and then remove foil, push potatoes down and return to your oven for a further 20-40 minutes until golden brown.
