Kieran, tell us about the Wedding Sale you are offering?
We put our Wedding Sale together so couples can make great savings at the end of the year and still have a fabulous wedding! Firstly we were thinking of discounting our own packages, but now we have rallied together some top notch suppliers, not just to reduce your bill at the hotel, but your overall day! Imagine getting up to 20% off on EVERYTHING!! We’re potentially looking at thousands of Euro worth of savings for couples here!
Who are the suppliers you are working with?
Of course nothing but the best! I am working on a few more at the moment, but so far we have Rebel Entertainment; they have 2 of the best wedding bands around and are offering an all-inclusive package at a reduced rate! We are also working with Cakes by Dawn, she is from Mallow ; we love supporting local! She is giving 20% off her amazing cakes (trust me, they really are amazing). John Sexton Photography came on board, he is giving €100 off any of his packages, I’ve seen John’s work and he is top of the range, he is extremely creative and the albums are out of this world! Sharon in Park West Flowers is giving a discount as well! You should see the amazing things that woman can do with flowers and this coming from a guy is a pretty big thing to say, but oh my god!! We also have Anthony Fleming Videography offering 20% off his packages and apart from being the nicest guy you will ever meet, the videos this man puts together are second to none! There are loads more to come and we will have it all up on our website in the coming week. I can’t believe how generous everyone is being, but they all said that Springfort Hall compliments their work…. It is a very special place.

Do you have dates available for newly engaged couples?
We certainly do! We have a few in October and a lot in November, it is a great opportunity for anyone who wants an early Christmas themed wedding to have it at the end of November at such a brilliant discounted rate!
Have you had a busy year and what will 2016 bring?
Thankfully we have had a great year. Bookings have increased again from last year and people are in better spirits now; they all seem to stay up a little later, sing a little louder and dance a little more! We are certainly enjoying ourselves at work. We are constantly improving and by the time 2016 comes around we will have even more experience at doing what we already do brilliantly!
We always hear about the delicious food at Springfort Hall. Kieran if we were planning a meal at Springfort Hall what are your favourite dishes?
Wow, this is a tough question! You can’t not mention the 12 Hour Feather Blade of Hereford Beef! We always try to do something unique with our dishes and with this main course we use the Feather Blade cut which is unique in itself as you don’t find it on menus very often. We then cook it for 12 hours!! I can’t give away any of our secrets, but by the time we are finished with this, you would eat it with a spoon, it just falls apart! I could go on, but this could literally take days!
